There are many reasons I chose to come to the French Laundry.

Being a chef for all individuals, they learn about French cuisine in many ways at least once during their career. I also desired to learn French cuisine which I am so lack of. There will be so many positivities I can improve myself once I learn elements of it.

Whenever I visited Per se, I always thought about how much the effort was put to build this empire. Food, service, atmosphere and everything was just extraordinary.

  1. history & story telling ; the restaurant has been nearly 30 years. Guests know what that means.

  2. relationship ; they work so closely with farmers and purveyors. they respect their philosophies and produces all the time.

  3. system ; They provide simple and big pleasure based on their experience and know-how even though changing menu daily.

  4. Thomas Keller Restaurant Group ; I feel everything exists mainly for the French Laundry.

  5. Etc

This is incredibly big honor for me to work here as sous chef. More excitement comes when my background meets French cuisine.
